Cajun Spiced Pompano

Serving: 1

Preparation Time: 5 minutes

Cooking Time: 10 minutes




 1 whole pompano

1 chili red

1/2 tsp cajun spice

dash of basil, thyme, rosemary

dash of salt

1 garlic clove, minced

1/2  cup tomatoes, chopped

1/4  cup onion, chopped

1/4 cup ginger, minced

1/3 c olive oil

1/4 slice lemon

Cilantro (optional)


  • Rub the spices into the fish after coating with olive oil
  • Blanch the fish
  • In a skillet, sauté ginger, garlic, onions, in olive oil on medium heat.
  • Add tomatoes & peppers, cook for about 2-3 minutes
  • Lay over the blanched fish in the sauce


  • Squeeze lemon juice over the fish
  • Cover and cook on medium-low for approximately 5 minutes
  • Garnish with cilantro (optional)
  • Serve over quinoa or brown rice
